From the Barn brings you recipes straight from the kitchen of one of our local Care Services Co-ordinators — a fantastic cook and baker who always spoils us in the office with their homemade treats. They know first-hand what our clients living with chest, heart, and stroke conditions need to eat to stay well.
This rustic nut and seed loaf is one of their healthy, hearty favourites — perfect fresh from the oven.
Ingredients
200g wholemeal flour
1 tsp baking soda
50g soda bread flour
2 tbsp wheatgerm or bran
25g mixed seeds and finely chopped nuts (whatever you have)
50g margarine
25g brown sugar
225ml buttermilk
Method
Mix flour, seeds, nuts, baking soda, and sugar.
Rub in the margarine to form fine crumbs.
Pour in buttermilk and mix well together.
Place in a greased loaf tin.
Sprinkle porridge oats on top.
Bake in a preheated oven at 180°C for 35–40 minutes.
