From the Barn brings you recipes straight from the kitchen of one of our local Care Services Co-ordinators — a fantastic cook and baker who always spoils us in the office with their homemade treats. They know first-hand what our clients living with chest, heart, and stroke conditions need to eat to stay well.
These turkey burgers are one of their favourites — light, flavourful, and perfect for the barbecue or served with a crisp salad.
Ingredients
1kg turkey mince
½ red onion, finely chopped
1 green chilli, deseeded and finely chopped
4cm piece root ginger, grated
1 tbsp wholegrain mustard
1 medium egg
50g fresh white breadcrumbs
Large handful fresh coriander, chopped
Method
Put all the ingredients into a bowl, season well and mix together. Using your hands, shape into 8 burgers, cover and chill.
Preheat the oven to 180°C.
Heat 2 tbsp vegetable oil and brown the burgers on each side. Arrange on a baking tray and cook for 15 min, or barbecue until golden and cooked through.
Serve in a burger bap with lettuce and sliced tomato — good with mango chutney — or serve the burger by itself with a tossed salad.
The burgers also freeze well.
